Designation of Origin: Deutscher Landwein Main

Vintage: 2023

Grape(s): 60% Müller-Thurgau and 40% Domina. Both of these grapes were bought from a friend who is currently going through organic certification. We wanted to make a wine that is a reflection of their place, so we decided on a rotling style, which is a blend of red and white grapes.

Vinification: We picked the Müller-Thurgau and Domina on two different days. Both times we picked both varieties. They were destemmed and married together for a maceration of 3 days, where they started to ferment lightly, and then they went to the press.

Aging: 11 months in used 500L barrels + six months in bottle before release.

Bottled: 24th of August 2024

Soil type: Keuper

Sulfur: All of our wines had a microdose of sulfur pre-bottling, and analyses came back under 20mg total.

A note about the name: Rotling is stuck in the past no more, it’s a newstalgia.
