Designation of Origin: Deutscher Landwein Main
Vintage: 2023
Grape(s): 100% Silvaner
Vinification: Silvaner has a high pectin content, so we foot-stomped the grapes and macerated them overnight to start breaking down the pectin, and we pressed the next day.
Aging: We put 1100 litres of this wine in our new barrel made with wood from the Swabischer Hall, close to were Christoph is from in the south of Germany. The barrel was untoasted and we fermented a wine inside to season it before we put in the Silvaner. We also had a 500L used acacia barrel.
Bottled: 24th of August 2024
Soil type: We have four plots of Silvaner mixed in here. Some are in the flat vineyards planted on gipskeuper, some are on the hillside where the soil has a higher proportion of schilfsandstein.
Age of vines: The vines were planted between 1996 and 2003.
Sulfur: All of our wines had a microdose of sulfur pre-bottling, and analyses came back under 20mg total, except this Silvaner which had 21mg total.
A note about the name: No regrets? Most of the time.
