Vinification: The grapes were destemmed, and macerated for two weeks with very gentle manual punchdowns daily.

Aging: We made one 500L used barrel of this wine.

Age of vines: This vineyard was planted in 1995

Sulfur: All of our wines had a microdose of sulfur pre-bottling, and analyses came back under 20mg total.
